X3 Cuisines of the Caribbean

Shaped by centuries of migration and colonization, Caribbean cuisine is a rich tapestry of flavors. This course explores how Spanish, Dutch, French, British, African, Indian, and Chinese cultures transformed indigenous recipes across the region. Through live cooking demonstrations, we will prepare authentic dishes from various islands and analyze how different spheres of influence created distinct culinary traditions. Join us to taste and compare how history, culture, and geography blend together on the Caribbean plate.


NOTE: This class will meet at the Church of the Messiah Parish Hall in Rhinebeck for four sessions on Wednesdays, September 23 and 30, October 7 and 14.

Fee: $60 cash for four sessions, payable at the first class.

Harvey Monder has been fascinated by the foods of Southeast Asia for over 65 years. His interest developed when he accidentally came across a book on Indonesian cooking. Through the years, his interests spread to include other countries of Southeast Asia. Harvey is self-educated on regional cooking techniques and ingredients. He has prepared representative meals for parties and picnics. In addition to his interest in Southeast Asia, Harvey has taught classes in Caribbean, Japanese, and Mediterranean cooking.
