Does real butter make your happy heart churn? Then this butter making class is for you! Attendees will observe and participate in an interactive demonstration of methods used to create both sweet and cultured butter, as well as try to see if their palate can detect the difference in an interactive taste test. Jessica Keahey, founder of Sweet Freedom Creamery and avid cheesemaker, discusses the importance of microbiology and milk composition in buttermaking. She will share how it is contrasted against manufacturing methods used to make margarine, as well as health benefits when sourced from pastured animals. Participants will leave with recipes for enhanced culinary butters sure to impress future dinner guests.

Jessica Keahey is the owner and Big Cheese at Sweet Freedom Cheese, the first  cut-to-order cheese shop in Arkansas.  Jessica has studied extensively with cheese experts from around the globe, making and mongering, for the past 9 years.  She has earned the distinction of being named a Certified Cheese Professional by the American Cheese Society and holds a Level 3 sommelier certification from the Wine and Spirit Education Trust.  Sweet Freedom Cheese Shop opened in 2018 and has been featured in Cheese Market News, Culture Magazine, and was named by both The Wall Street Journal and Taste of Home Journal as one of the top independent cheese shops in the US to find the country's best cheese.
